My favorite time of the year is Pumpkin Spice Latte season!! I have two recipes you can make that bring the pumpkin spice celebration alive. We have a Pumpkin Spice Latte DIY recipe and then a Pumpkin Spice Cobbler recipe that will be the hit of any party. First, let’s start with a DIY Pumpkin Spice Latte Recipe. Of course if you get one every morning, it can add up quick. Not to mention the time waiting in the drive-thru. You could easily save that time by making your own Pumpkin Spice Latte at home and I have the recipe that really hits the spot.
I have a super easy version that you can make in your microwave in under 2 minutes.
First, just combine your ingredients in a microwave safe bowl.
INGREDIENTS:
-1 cup vanilla soymilk
-2 Tbs Pumpkin Puree
-1/4 teaspoon pumpkin spice
-1/4 teaspoon vanilla extract
-Now mix them all well
-Cover with plastic wrap.
-Poke holes to vent.
-Heat in Microwave for 2 minutes.
Once heated, remove plastic wrap and froth with frother or whisk. Add to 1/4 cup strong coffee or espresso. Optional topping sprinkles. In small bowl, mix 1 tsp sugar 1/2 tsp cinnamon 1/2 tsp pumpkin spice 1/2 tsp nutmeg. Mix and sprinkle a little on top.

Pumpkin Spice Latte Recipe
There is also a super easy Pumpkin Spice Cobbler that you can make in the crockpot and it is one of the best things I have ever tried. It is sooooooo yummy and it definitely brings home the taste of fall. This is great for watching game day. This is Pumpkin Spice Perfection easily made in a crock pot.

In a bowl mix together:
1 cup Flour
2 tsp Baking Powder
1/2 tsp Salt
1/2 cup sugar
2 tsp Pumpkin Pie Spice
In another bowl mix together:
1/2 cup canned pumpkin puree
1/4 cup milk
1/3 vegetable oil
1 tsp vanilla
Now mix the two together:
Spread this in your slow cooker that is coated with parchment paper.
Turn it on high.
While it is heating, in a bowl, mix together
1/2 cup sugar
1/2 cup brown sugar
1 bag of 1/4 cup chopped pecans
Sprinkle this on top and spread out.
Now pour
1 1/2 cup of very hot water on top.
Keep your slow cooker on high for 1 – 2 hours until fully cooked.
As it starts cooking, this makes your house smell like a combination of pumpkin pie and a pumpkin spice latte. Once fully cooked, you can scoop onto a plate, put on a scoop of ice cream and enjoy! Watch the video to make the recipe!
